Handi Gosht is ancient dry stew, made up of mutton. Bite-size mutton grilled in nursing onion based sauce, fine flavored with ginger, garlic paste, and black paper. Handi Gosht is a thick creamy meat curry served with rice, roti or nan along with the green salad.

Ingredients

  • 1/2KgMutton ( बकरे का मांस )
  • 1PcsChopped Onion ( कटा हुआ प्याज )
  • 1/2teaspoonLemon Juice ( नींबू का रस )
  • 2tbspGinger-Garlic Paste ( अदरक-लहसुन का पेस्ट )
  • 1/2CupOil ( तेल )
  • 2tbspRed Chili powder ( लाल मिर्च पाउडर )
  • 2tbspTurmeric Powder ( हल्दी पाउडर )
  • 1/4CupCinnamon stick ( दालचीनी )
  • 1.5tbspSalt to taste ( नमक स्वाद अनुसार )
  • 1tbspMixed Spice Powder ( मिश्रित मसाला पाउडर )
  • 1PcsBlack Cardamom ( बडी इलायची )
  • 1PcsCinnamon ( दालचीनी )
  • 2PcsCloves ( लौंग )
  • 4PcsBlack Pepper ( काली मिर्च )
  • 2PcsGreen Cardamom ( छोटी इलायची )
  • 1.5tbspWheat Flour ( गेहूं का आटा )mixed with ¼ cup of water

Instructions

  1. Wash the mutton pieces thoroughly and strain excess water.

  2. Take a mixing bowl and add lemon juice, ½ teaspoon salt, and turmeric powder to the mutton pieces and mix well and keep aside for 30 minutes for marination.

  3. Heat oil in a Handi (frying pan) and fry chopped onion.

  4. When onions are golden brown, add rest of Masala (spices).

  5. Add in mutton and fry well so that its all brown.

  6. Then mix curd and cook for a minute. Then, add 2 cups of water.

  7. Cover and cook till meat is tender.

  8. Now, add flour and mix well and cook for 15-20 minutes on low heat.

  9. Put "Dam" (heat) till oil floats on top. Serve hot with Roti or Rice.
