Dhabe Da Meat Recipe

Dhabe Da Meat - 'Dhaba' is a road-side food stall in India and Pakistan.  It is the special Punjabi delicacy of lamb meat cooked in rich oil or ghee and combined flavors of whole dried spices. It is meat-based gravy, especially mutton.


  • 1tea spoonGaram Masala Powder ( गरम मसाला पाउडर )
  • 1/2tbspGarlic ( लहसून )chopped
  • 1cupYogurt ( दही )
  • 1tea spoonCumin Powder ( जीरा पाउडर )
  • 1Kglean shoulder of lamb
  • 1tea spoonCoriander Powder ( धनिया पाउडर )
  • 4PcsCloves ( लौंग )
  • 6tbspOil ( तेल )
  • 8PcsGreen Chilies ( हरी मिर्च ) chopped
  • 1 1/2tbspGinger ( अदरक )chopped
  • Salt to taste ( नमक स्वाद अनुसार )
  • 1tbspChopped fresh Coriander Leaves ( ताजा काटा हुआ धनिया पत्ती )
  • 1/3cupTomato ( टमाटर )chopped
  • 4PcsBay leaf ( तेज पत्ता )
  • 4PcsGreen Cardamom ( छोटी इलायची )
  • 1tea spoonRed Chili Powder ( लाल मिर्च पाउडर )
  • 3/4cupOnion ( प्याज )chopped
  • 1tea spoonTurmeric Powder ( हल्दी पाउडर )


  1. Marinate lamb with yogurt, red chilly powder, turmeric powder, cumin powder, coriander powder and salt.
  2. Stir to mix well and leave aside for 5 minutes.
  3. Heat up the oil in a deep wok (kadai).
  4. Mix in bay leaves, cloves and cardamoms and stir fry for 30 seconds.
  5. Combine the onions and stir fry until golden brown.

  6. Now add marinated lamb stirring it well for about 10 minutes, until the lamb is cooked and tender.

  7. Then add tomatoes and green chilies, stirring frequently until the oil separates from the gravy.

  8. Pour out little water if necessary.
  9. Sprinkle garam masala and stir fry for about 2 minutes.
  10. Add salt to taste.

  11. Decorate with coriander leaves, ginger juliennes and cut green chilies.
