Ingredients

Ingredients to make Dabeli Masala

  • 2 teaspoon coriander seeds (साबुत धनिया)
  • 1 small piece of cinnamon stick (दालचीनी)
  • 4-5 cloves (लौंग)
  • 1 black cardamom (बड़ी इलायची)
  • 1 teaspoon cumin seeds (जीरा)
  • 4-5 dry whole red chilies (सूखी साबुत लाल मिर्च)

Ingredients for Tamarind and Dates Chutney

  • 1 cup dates (खजूर) after extracting the seeds
  • 2 tablespoon tamarind pulp
  • 1/4 cup sugar (चीनी)
  • 1 teaspoon cumin powder (जीरा पाउडर)
  • 1 teaspoon red chili powder (लाल मिर्च पाउडर)
  • salt to taste (नमक स्वाद अनुसार)
  • सामग्री लहसुन और मिर्च की लाल चटनी बनाने के लिए

Ingredients to make garlic and red chili chutney

  • 4-5 dry whole red chilies (सूखी साबुत लाल मिर्च)
  • 1/2 cup garlic cloves (लहसुन का लौंग)
  • 1 tablespoon lemon juice (नींबू का रस)
  • salt to taste (नमक स्वाद अनुसार)

Ingredients to make Aloo Tikki

  • 3-4 mashed boiled potato (मसला हुआ उबला आलू)
  • 1 finely chopped onion (बारीक कटा हुआ प्याज़)
  • 2 teaspoon Dabeli masala (दाबेली मसाला)
  • 2 pinch asafoetida (हींग)
  • 1/2 teaspoon cumin seeds (जीरा)
  • 2 teaspoon oil (तेल)
  • 2 teaspoon tamarind chutney (इमली की चटनी)
  • 1/4 cup pomegranate seeds (अनार के दाने)
  • 1/4 cup grated fresh coconut (कद्दूकस करा हुआ ताजा नारियल)
  • salt to taste (नमक स्वाद अनुसार)
  • 2 teaspoon chopped fresh coriander leaves (ताजा काटा हुआ धनिया पत्ती)

other ingredients

  • 5 -6 burger buns (बर्गर बन्स)
  • 1/2 cup roasted Peanuts (भुनी हुई मूंगफली) भुनी मसाले वाली मूंगफली
  • 2 tablespoon chopped fresh coriander leaves (ताजा काटा हुआ धनिया पत्ती)
  • 1/2 cup finely chopped onion (बारीक कटा हुआ प्याज़)
  • 1/2 cup fine Sev of gram flour (बेसन के बारीक सेव)
  • 1/2 cup pomegranate seeds (अनार के दाने)
  • tamarind chutney (इमली की चटनी)
  • garlic chutney (लहसुन की चटनी)

Instructions

How to make Dabeli Masala

  • Put all the spices listed in the Dabeli Masala ingredients list in a pan. And dry roast them over low flame.
  • Then grind them in a grinder jar to make fine powder from it.

Method of making Tamarind and Date Chutney

  • Put tamarind, Dates and 2 cups of water in a deep vessel and let it boil.
  • Boil them until the Dates get melted. It will take about 30-40 minutes. Then let this mixture cool down.
  • After cooling, put it in the mixer and make a fine paste from it.
  • Filter this juice in a sieve filter, to remove the fibers.
  • Now mix salt, red chili powder, cumin powder and boil it once again.

How to make garlic and red chili chutney

  • Soak red chilies in hot water for one hour. Now mix garlic, salt, and white vinegar in the soaked red chilies. Grind it in a fine paste.

How to make Potato Tikki for filling in Dabeli

  • To make Potato Tikki - put oil in a pan to heat. To this hot oil add asafetida and cumin seeds. After frying cumin seeds add chopped onions and fry it too.
  • Now to it mix boiled potato, and mix well. Then add salt and Dabeli masala and fry for 2-3 minutes more. Then take it off the flame.
  • Add grated coconut, pomegranate seeds, and green coriander to it. Mix them well and make 5-6 Tikkis from this mixture.

Dabeli Recipe

  • Firstly, cut the Bun from the middle and apply butter or ghee, then roast the Bun from both the side.
  • Now take a piece of Bun, and apply garlic and red chili chutney on it. Then place a potato Tikki on top of it. Over it add chopped onion, masala peanuts, and pomegranate seeds.
  • Now sprinkle a pinch of Dabeli masala over it. Then add fine Sev on it. Now apply Tamarind chutney on the other piece of Bun, and close it.
  • Likewise, prepare all Dabeli and serve them immediately.
